No really, our family recipe calls for only one bottle of red wine to go in with the caramelised onions, so I’m not sure how we tend to use two with every batch, someone suggested we install cameras to monitor the production process but given that I am the one producing it, I voted against this silly idea.
Where was I? Yes, supple eggplants, caramelised onions, mushed tomatoes, red wine (one bottle) light spicing and a few hours of simmering and reducing is what really makes this condiment.
